Hi! My name is Mitzi Avila. I'm the owner and head baker of Cookies and Chill. I'm a restless 35-year-old entrepreneur from Leon Guanajuato, México. In 2019, I created Cookies and Chill while eating freshly baked cookies, chillin', and watching Netflix on my favorite cozy couch in Richmond, VA. My passion for baking cookies and enjoying them anytime gave me the idea that creating my brand and baking from-home goodies for everyone around me could be fantastic.
Earlier in 2010, when I was studying at the university, I was selected to travel to Tokyo as an International Exchange student. That's how I got passionate, and I learned from my Japanese friends about this great country, its food, and the art behind its baked goodies.
My beloved country, Mexico, is definitely the most significant influence in flavors, textures, and, for sure, colors. That's why you can find the lovely Tres Leches cake and my favorite sweet bread, the Mexican Conchas.
During the pandemic in 2020, while I was still in Richmond, VA, I was thrilled to be recognized by Richmond Magazine as one of the best small local bakeries in town! In 2023, a friend told me about an exciting baking contest organized by the Blanton Museum, one of my absolute favorite places in the city! I was over the moon and couldn’t wait to dive in, spending days planning and perfecting my baked masterpiece.

Now, in 2024, one of my best sellers is my fluffy and light Japanese Cheesecake, which remains my customers' all-time favorite. I just recently baked my 5,250th cake!
Every season, I give free rein to my imagination to develop new and exciting internationally-inspired seasonal recipes. These days, my menu includes my signature Japanese Cheesecake in different flavors, my delicious French Crepe Cakes, fast sales of Mexican Conchas delightful pound cakes, and over 30 varieties of cream and jam-filled cookies, among many other baked goodies available in regular, gluten-free, dairy-free, and/or sugar-free!
I believe that serving the community is an essential part of my business. I created "Support our Community," which I support through different and exclusive baked goodies and associations like Austin Pets Alive and Love-A-Bull ATX.
